Easy Cooking Ideas: Must-Tries for Noche Buena

With back-and-forths to the malls or grocery stores, pressure to buy presents for your loved ones and other duties, the holidays are definitely the busiest times of the year. But hey, here’s something you can tick off of your list: allow us to serve you a Christmas edition of Ginhawa with these Noche Buena ideas!

 

SPAGHETTI WITH MEATBALLS

Ingredients

  • 1/4 kilo ground pork
  • 2 hotdogs, finely chopped
  • 1 large egg, beaten
  • 1/4 cup breadcrumbs
  • 1 pack (200g) spaghetti
  • 2 cloves garlic, finely chopped
  • 1 small red onion, finely chopped
  • cheese, grated (optional)
  • 1 pack (250g) tomato sauce
  • salt and pepper, to taste
  • 1 tbsp sugar, to taste
  • oil

Directions

  1. Prepare meat balls by mixing pork, hotdogs, breadcrumbs, egg, salt and pepper. Form into 1/2-inch balls.
  2. Pan fry meatballs. Transfer to a plate, and set aside.
  3. Saute onion and garlic. Add tomato sauce and sugar. Bring to a boil, then simmer. Season to taste with sugar, salt and pepper.
  4. Cook spaghetti according to package directions. Drain, toss with sauce and serve with meatballs.

 

Salmon & Steak ala ‘SURF & TURF

Ingredients

For Salmon

  • 1 pound fresh salmon fillet
  • 2 tbsp salted butter
  • Salt and pepper

For Steak

  • 3 thick petite steaks cut into halves
  • Salt and pepper
  • Parsley, minced
  • 2 stems of rosemary, minced
  • 1 tbsp olive oil
  • 4 medium cloves of garlic, minced
  • 2 tbsp butter, melted

Directions

For Salmon

  1. Remove the skin and season your salmon with salt and pepper.
  2. Cook salmon on buttered griller for 3-4 mins on each side.
  3. Combine ingredients for the butter sauce and cook in a pan for 2-4 mins. Top cooked salmon with butter sauce.

For Steak

  1. Mix all ingredients in a bowl and marinate for a minimum of an hour.
  2. Place sauté pan on low heat until butter bubbles. Cook 2 pieces of steak for 4 mins (medium rare).
  3. Use butter gravy in pan for steak sauce.

Serve cooked salmon and steak while warm. ♨️


 

BEEF STEW

Ingredients

  • 2 pounds beef stew meat, cut into 1-inch pieces
  • 1 bay leaf
  • 1/4 cup all-purpose flour
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1 tsp Worcestershire sauce
  • 3 potatoes, diced
  • 1 onion, chopped
  • 4 carrots, sliced
  • 1 1/2 cups beef broth
  • 1 stalk celery, chopped

Directions

  1. Place meat in slow cooker. Combine flour, salt and pepper before pouring over meat.
  2. Stir in garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots and celery.
  3. Cover and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

 

JUICY ROASTED CHICKEN

Ingredients

  • 1 whole chicken
  • salt and black pepper, to taste
  • 1 tbsp onion powder, to taste
  • 1/2 cup margarine, divided
  • 1 stalk celery, leaves removed

Directions

  1. Preheat oven to 350°F (175°C).
  2. Generously season chicken with salt, pepper and onion powder. Spread margarine in and out of the chicken cavity. Cut the celery into 3-4 pieces and place in the chicken cavity.
  3. Bake uncovered for 1 hour and 15 mins in the preheated oven, to a minimum internal temperature of 180°F (82°C). Remove from heat and baste with melted margarine and drippings. Cover with aluminum foil and allow to rest for about 30 mins before serving.

RED VELVET CAKE

Ingredients

  • 2 1/2 cups self-rising flour
  • 1 1/2 cups white sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 eggs
  • 1 cup buttermilk
  • 4 cups confectioner’s sugar
  • 1 tsp vinegar
  • 2 oz red food coloring
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup butter, softened

Directions

  1. Preheat oven to 350°F (175°C).
  2. In three separate containers, combine sugar with oil and eggs, food coloring with vinegar and buttermilk, then baking soda with flour.
  3. Alternately, add flour and buttermilk mixtures to the sugar mixture. Stir 1 teaspoon vanilla before pouring into greased 8-inch round pans.
  4. Bake for 20 to 25 mins. Remove from oven and let it cool.
  5. For frosting, mix together cream cheese, butter, confectioner’s sugar and 1 teaspoon vanilla.
  6. Frost cooled cake.
